FREEZING RATE STUDIES IN BLOCKS OF MEAT OF SIMPLE SHAPE

Resumo

A numerical solution of the heat conduction equation with variable specific heat and thermal conductivity is given for spherical and three-dimensional plane boundaries. This was applied, with the aid of a digital computer, to the calculation of freezing times for blocks of meat. The calculated freezing curves and freezing times are shown to agree with experimental measurements on minced beef, and they are also compared with analytical approximations to freezing times of cubes and spheres of meat.
